What travels and what does not

A box is a small oven that is cooling down, and that single fact decides everything on this list. Pizza and pasta hold their shape because they were never crisp in a way that mattered. Slow-cooked ribs hold up better than almost anything, because the texture came from hours rather than from the last two minutes. Fried things are the opposite: steam has nowhere to go inside a closed container, and a chicken wing that was crisp when it left will not be crisp when it arrives. Where that is true, the dish page says so rather than pretending otherwise. Sauces and dressings are packed apart wherever they would soak into bread or leaves. None of this is unusual — every kitchen faces it. What is unusual is saying it out loud on the page instead of letting the customer find out.

What is deliberately missing

The steaks are not on this list. A 300g striploin is cooked to a temperature somebody chose, and that temperature is the dish. It keeps cooking in a closed box, and what arrives is a grade above what was ordered, resting in its own juice on cardboard. The same goes for the ice cream, for obvious reasons. Leaving them off costs an order now and then. Putting them on would cost the person who ordered one, which is worse. If a steak is what the evening calls for, it is worth the walk to Sea World: the table, the sauce chosen at the table, and the cut arriving at the temperature asked for.

Ordering for a group or an office

Food for several people arriving at once is a different problem from food for one. The things that hold heat longest should be ordered in the largest quantity: ribs, pasta bakes, the sharing plate. Pizza splits cleanly and survives being cut cold, which makes it the safest thing to over-order. Salads arrive separately dressed and are the only part of the order that improves for being late. For an office at lunch, the platters are the wrong shape — they are built to be eaten standing around one board — while individual pasta and pizza portions reach eight desks without anyone serving anything. Order one more portion than there are people, and make the extra a pizza.
